Preheat oven to 350 degrees

In large bowl combine flours, ground flax seed, baking powder and soda and salt

In separate bowl combine butter and honey using a whisk or electric beater to combine

Add vanilla, pineapple and carrots (can also add nuts and or raisins) to the butter mixture. Be sure pineapple has had time to sit and drain.

Stir in dry ingredients, do not over mix

Pour into regular sized paper lined muffin cups

Bake for 22-25 min or until toothpick comes out clean.
