Steps
Sequence Step
1Preheat oven to 350 degrees
2In large bowl combine flours, ground flax seed, baking powder and soda and salt
3In separate bowl combine butter and honey using a whisk or electric beater to combine
4Add vanilla, pineapple and carrots (can also add nuts and or raisins) to the butter mixture. Be sure pineapple has had time to sit and drain.
5Stir in dry ingredients, do not over mix
6Pour into regular sized paper lined muffin cups
7Bake for 22-25 min or until toothpick comes out clean.
