Whisk eggs.

Add flour and milk, whisk to blend.

Add sugar, salt, and baking powder. Whisk to blend. Add vanilla if desired (I add 2 tsp.)

heat waffle iron.

Beat egg whites until fluffy and nearly stiff. Fold into batter. Do not over mix.

spoon into waffle iron and cook according to iron instructions. These take 3 minutes in my iron - I little quicker than other recipes.
