1Beat eggs, oil sugar and vanilla until pale and fluffy. Mix together dry ingredients and add to liquid mixture. Fold in shredded skin on zucchini. Pour into greased loaf pan. Bake at 350 degrees. for 60 minutes until firm to touch in the center. Cool 10 minutes in pan and then turn out on wire rack. Freezes well.
