Roast garlic in a 400 degree oven for about 45 minutes. When garlic is tender, squeeze out of skins and make a paste.

Heat oil in a skillet. Add sausage, garlic, shallot, and red pepper flakes. Saute until shallot is golden brown. Add tomatoes, beans, and stock; cook until reduced by half.

Cook pasta per package instructions. Drain and toss pasta with sausage mixture, parsley, basil, and cheese.
