Dice the vegetables, leeks, onions, carrots celery,etc. Heat olive oil in stock pan. Sautee the diced veggies for 7 mins or until tender. Add seasonings and bay leaves. Add the stock or broth. Add the cannelini beans

Add the canned and frozen veggies. Chope kale and escarole, add and bring to a boil. Lower heat and simmer until kale is tender. Longer it simmers the better it gets.
