Like a cross between mashed potatoes and mac-n-cheese, this blend of rice, quinoa, and cheese is a great substitute for a whole grain, better balanced comfort food.
Rinse quinoa, then add rice and quinoa to a stovetop pot with a tight-fitting lid (or rice cooker).
Add chicken stock and water. Bring pot to a boil. Then, reduce the heat to a bare simmer and cover with a lid.
Continue simmering for 45 minutes.

When rice and quinoa are cooked, add salt, pepper, garlic powder, onion powder, and basil, or season as desired. Top with cheese before serving.
