Steps
Sequence Step
1heat heavy wok to high and melt 1 tsp coconut oil to coat the surface.
2season ground turkey with onion powder, sea salt, and pepper. Salute until browned. Remove with slotted spoon and place into a large chili pot.
3Add 1 tsp coconut oil to remaining oil in the wok. Saute onion, celery, bell pepper, carrots and poblano pepper (de-seeded and diced) for 5-7 minutes or until lightly browned. Use slotted spoon to move into the chili pot.
4Add all remaining ingredients (except the baby spinach) to the chili pot.
5Stir well and bring to a boil. Once boiling, reduce heat to low and simmer for at least 1 hour.
6Before serving, add roughly chopped spinach to the pot and simmer for an additional 5 minutes or until spinach has wilted. Stir thoroughly to combine.
7Serve topped with 2 tablespoons greek yogurt.
