Place oats into a blender and grind to approximately the consistency of flour.
2
Put chopped nuts in the blender and grind until they are in small pieces.
3
Combine oats, flour, 1/2 cup of nuts, cinnamon, and salt in a large container.
4
Add honey, milk, and vanilla and stir until a smooth dough is formed, with just enough liquid to enable the dough to be tightly packed. A small amount of additional milk may be required.
5
Firmly pack half of the dough in an aluminum foil lined 8X8 pan. Spray the aluminum foil with cooking spray for easy removal.
6
Mix bananas with the remaining nuts and layer the mixture over the dough.
7
Put the pan in the freezer for 2 hours or until the bananas are firm and do not run when the pan is tilted.
8
Preheat the oven to 350oF.
9
Pull the aluminum foil (with the 2 layers in it) from the pan and put a new layer of aluminum foil in the pan.
10
Pack the remaining dough into the pan, then flip the frozen layers on top of it so that the banana layer is between the two layers of dough.
11
Place the pan in the oven for about 30 minutes or until the top oat layer seems firm and slightly browned.
12
Remove from the oven and allow it to cool in the pan for 10-15 minutes.
13
Remove the aluminum foil (along with the bars) from the pan and flatten the foil to allow the bars to be cut. This should make 12 cereal bars (2 columns of 6 bars).
