1Preheat oven to 375F spray 9 x 12 glass casserole dish with non stick spray
2wash mushrooms and cut into thick slices Chop red pepper into 3/4 inch pieces
3saute mushrooms 4-5 minutes in olive oil Spread in bottom of glass dish Sauté pepper until soft Layer peppers over mushrooms Crumble feta cheese over mixture
4Beat eggs and egg whites and pour over mixture. Stir the mixture Bake 35-45 minutes
