Preheat oven to 325F. Combine butter, honey, and brown sugar; beat till smooth. Add eggs one at a time and beat in. Add vanilla, baking soda, and salt and mix well. Add peanut butter, oats, chocolate chips, and walnuts. If dough is too sticky, refrigerate 30-60 minutes to stiffen.
Grease cookie sheet. Drop dough by teaspoons onto sheet, 2 inches apart. Flatten dough with the bottom of a glass dipped in water; neaten edges with wet fingers, to help hold them together (cookies tend to be crumbly).
Bake until lightly colored around the edges, 10-12 minutes. Let cookies cool for 1 minute on sheet, then transfer to cooling rack. Store in air-tight container.
