soak beans overnight, pour off water.
boil with fresh water for 1 hour (until done but still firm)
add rice (white and brown), add water if needed, cook for 20 to 30 minutes.
after 15 minutes, add spices.
once rice is cooked, add tomato and cider vinegar. stir completely, bring mixture back to simmer.
let cook for another 5 minutes.
