Wrap tofu in a kitchen towel, place something heavy on it and let it drain for 30 min.

Slice tofu block in half lengthwise. Then slice each block into 12 squares.

place a wire rack over a tray or baking sheet, and place slices on the rack

Mix vinegar, nutritional yeast, salt and a few drops of liquid smoke (option) in a small bowl.
Use a pastry brush to coat the top sides of the tofu. sprinkle 1/4 tsp. salt evenly over the slice.
Turn the slices over and repeat with remaining vinegar and salt

Place tray in refrigerator overnight (up to 2 days) until slices are dried to your preference
