In a large mixing bowl combine mashed bananas, eggs, egg white, sugar, ground flax, canola oil, vanilla, and salt.

In a microwave safe bowl or measuring cup, place 1 tsp vinegar in cup. Fill cup with milk to make total of 1/2 cup 2 Tablespoons in the cup. Microwave for 30 seconds until milk curdles.

Dissolve baking soda in the soured milk. Add combination to mixing bowl and mix well.

Add flours and cinnamon to mixing bowl. Blend well by hand.

Pour into 2 greased loaf pans.

Bake at 325 for 1 hr 10-20 minutes.

Also makes 24 muffins. Bake at 325 for 25-30 minutes.
