1Grease pie dish with olive oil
2put veggie in pie dish.
3Crack eggs and beat once blended and frothy add 1/4 c. ricotta cheese. Beat with eggs until ricotta cheese lumps are removed from eggs
4Blend in cheese to egg and Parmesan mixture
5Pour eggs, Parmesan, and ricotta cheese mixture over vegetable.
6Put vegetable eggs in pie pan into oven.
7Bake until quiche can be cut without water
