Recipe Description No flour or eggs - much less sugar and fat. Other options: Add cocoa powder to the bananas; vary the fruits or nuts used in the cookies, and/or add seeds. The cherries and dates are sweetened, but I did not find a way to enter sweetened dried fruit in the recipe, so I added some sugar to the recipe to estimate the nutritional components.

1Mash bananas with the salt and vanilla
2Mix banana mixture well with all other ingredients but the oats. NOTE: Do NOT add the brown sugar - including it in the recipe is my attempt to make up for the fact that I could not find sweetened dates or cherries to include in the recipe. 108 grams of sugar added to each of the fruits seems to translate to .22 teaspoons of sugar each.
3Add the oats and mix well.
4Firmly press mixture to tablespoon to form cookie and place on cookie sheet - they can be placed close to each other because they do not expand. I use a glass cookie sheet.
5Bake at 350 for 25 minutes.
6Let cool completely, the use a metal spatula to gently remove from pan.
