Peel and cut up apples (probably won’t need more than 2 medium apple). Add sugar, stir and let sit. To the apple mixture add oil and the egg. Stir in pecans and raisins. Blend flour, salt, soda, cinnamon & nutmeg together. Pour into the apple mixture, and stir well with a spoon.
Pour into a greased 8” pan, and bake in a preheated 325 degree oven for 45-50 minutes.
Check to make sure it is cooked enough. After removing from the oven, sprinkle powdered sugar over the top.
The cake can be eaten warm or cold.
**I’ve have doubled the recipe and baked in a 9x13 pan.
