1 cup long grain rice 1 1/2 cups water 1 tablespoon unsalted butter 1/4 teaspoon salt 1/4 teaspoon freshly ground pepper 2 teaspoons mild curry powder 1 green onion, white part plus a few inches of green part, minced 1/2 cup finely chopped fresh pineapple or canned in its own juice, drained 1 cup seedless green grapes 1/4 cup seeded and minced green bell pepper 1 cup diced cucumber, for garnish 1 lime, cut into 4 wedges
