Recipe Description A twist on the old Cucumber-Onion Salad that my mom used to make, with fresh zucchini and tomato. Use fresh minced garlic to really boost the garlic flavor.

mediumzucchini, chopped

small whole (2-2/5Tomatoes (or 1 medium or large)

cupVinegar, apple cider

cupolive oil, extra virgin

cupwhite sugar (or sugar substitute, if you prefer)

teaspoonblack pepper, freshly ground

teaspoonsalt, garlic

tablespoondried dill (or fresh, if available - increase amount to taste)

cup (8 fl oz)water
Steps
Sequence Step
1Peel and slice cucumber thin (leave the skin on if you prefer, or remove part of peel to make stripes).
2Slice onion into thin rings or strips.
3Coarsely chop zucchini into chunks.
4Carefully remove tomato stems with a paring knife and chop tomato into chunks.
5Stir and combine all veggies in a glass or plastic bowl/container, or mason jar(s) if you prefer.
6In another glass container, mix the rest of the ingredients very well with a wire whisk.
7Pour dressing over veggies, and make sure they are completely covered.
8Close up your mason jar(s), or cover your glass bowl and place in refrigerator for 3 hours to marinate.
9Serve chilled.
