Sequence Step
1Half beets and place in medium saucepan; fill with water till beets are covered. Bring to a boil and then reduce to a simmer; cover and cook for 20-30 minutes, or until beets are soft. Drain and chop into smaller pieces. Remove and let cool.
2Preheat oven to 400 degrees. Peel and chop sweet potato into roughly same-sized pieces. Toss with oil and season with a dash of salt and pepper. Place evenly on a greased baking sheet. Cook for 30 minutes, or until sweet potatoes are browned. Remove and let cool.
3Combine ingredients and enjoy!
