Cook the potatoes in a pan of boiling water for 10-20 minutes, until tender.

Mash the potatoes and place them in a mixing bowl. Blend in the egg yolks and oil. Season with salt and pepper.

Stir in the flour and mix to form a dough.

On a lightly floured surface, divide the dough into 24 pieces and shape into flat rounds.

Spoon the filling onto half of each round and fold the dought over to encase the filling, pressing down to seal the edges.

Melt the butter in a skillet and cook the ravioli for 6-8 minutes, turning once, until golden.

Serve hot, garnished with shredded basil leaves.
