1POUR TOTAL AMOUNT OF WATER INTO MIXING BOWL. HEAT CONVECTION OVEN TO 375 F.
2ADD TOTAL AMOUNT OF MIX TO THE WATER IN THE MIXING BOWL.
3MIX USING A PADDLE ATTACHMENT FOR 20 SECONDS. STOP MIXER. SCRAPE BOWL AND PADDLE. MIX FOR AAN ADDITIONAL 20 SECONDS.
4FOLD IN BLUEBERRIES ON LOW SPEED FOR ABOUT 20 SECONDS, DO NOT OVER MIX. IF USING FRESH BERRIES (ONLY DURING SEASON) FOLLOW STEP 4a, IF USING FROZEN BERRIES FOLLOW STEP 4b: 4a RINSE FRESH BLUEBERRIES WITH COOL WATER AND DISCARD ANY CRUSHED ONES. PULL OFF ANY STEMS. 4b DO NOT THAW FROZEN BLUEBERRIES, DRAIN AND FOLD INTO BATTER.
5GENEROUSLY SPRAY MUFFIN CUPS. FILL EACH TIN HOLE 2/3 FULL WITH BATTER.
6BAKE 11-13 MINUTES OR UNTIL GOLDEN BROWN. (ROTATE MUFFINS 180 DEGREES, 1\2 TURN AFTER 5 MINUTES OF BAKING) MUFFIN IS FULLY BAKED WHEN CENTER SPRINGS BACK WHEN LIGHTLY TOUCHED.
7LET STAND 5 MINUTES AND THEN REMOVE FROM CUPS\PAN.
