1. Separate fillets or steaks; cut into 6-ounce portions. Lightly spray pans with non-stick cooking spray. Arrange single layers of fish on pans.

Melt butter; add lemon juice and pepper. Use 1-cup lemon butter mixture for each pan of fish. Evenly brush mixture over fish, including sides and in-between.

In seperate pan, combine bread crumbs and salt. Use 1-cup bread crumbs per pan; evenly sprinkle over top of each piece of fish.

Bake 9 minutes in 375 F. oven. CCP: Internal temperature must reach 145 F. or higher for 15 seconds.

Notes:
Since Salmon does not hold well in serving line for long periods of time, prepare by progressive cooking methods in small batches.
