Delicious cool or toasted, since the whole wheat flour imparts a sweetness which is enhanced delicately by a little bit of honey. Bear in mind if you permit the sponge to rise for 10+ hrs your bread will have a lovely spring to it. Overall preparation of this bread is a 16+ hr project...but well worth it and simple.

Dissolve yeast in water. Mix flour using spatula to make moist stiff, wet dough. Cover with plastic wrap and leave room temperature to rise 5 hours (I found 10 was best)
