Found this on a blog. It's quick and easy, tastes great. I cubed the chicken instead of shredding and used turkey bacon instead of pork. I also added 1 can of whole diced tomatoes and 1 T of half and half.

Place onion, garlic and 2 cans diced tomatoes in food processor and blend until smooth. Transfer to a large saucepan over medium-low heat.

Add corn, stirring to combine, then add salt, pepper, cumin stirring to combine.

Stir in buttermilk and 1 T of half and half, if desired) and remaining can of diecd tomatoes, along with cubed chicken breast and turkey bacon.

Reduce heat to low and let simmer for 10-15 minutes. Serve inside hollowed out bread bowls, if desired.
