PREPARATION INSTRUCTIONS:

DRAIN CANNED MUSHROOMS.
MELT SHORTENING. SALAD OIL MAY BE USED.
CUT CELERY DIAGONALLY 1/8 INCH THICK
SLICE DRY ONIONS THINLY LENGTHWISE.
CUT FRESH PEPPERS - JULIENNE, 1/4 INCH.
CUT GREEN ONIONS IN 1.5 INCH LENGTHS. USE TOPS.
DRAIN CANNED BEAN SPROUTS.
1. SLICE BEEF INTO 1/8 INCH THICK SLICES. CUT SLICES INTO STRIPS 2 INCHES
LONG AND .5 INCHES WIDE. SET ASIDE FOR USE IN STEP 5.

COMBINE SOY SAUCE, SUGAR, PEPPER AND MUSHROOMS. SET ASIDE FOR USE IN
STEP 8

ADD SHORTENING OR SALAD OIL TO STEAM-JACKETED KETTLE OR STOCK POT.

ADD CELERY TO HOT SHORTENING OR SALAD OIL; SAUTE 1.5 MINUTES,
STIRRING CONSTANTLY.
