Preheat oven to 400 degrees

Allow cream cheese and bacon 30 minutes to get to room temperature.

Put on latex (or latex free) gloves. Trim off stem and slice each pepper lengthwise. Remove seeds and veins rinse wtih cold water.

With a butter knife, load up each half with cream cheese. Using 1/3 of a bacon strip, stretch it around the pepper and fasten it with a tooth pick.

Place evenly on a baking sheet wiped with olive oil

Place in oven for about 15 minutes, until bacon starts to brown. Remove from oven and allow poppers to set for at least 20 minutes before serving.
