1Cut up squash, zucchini, onion, bell peppers (experiment with others - potaotes, egg plant,turnips)
2Put in a bowl with a tight fitting lid
3Mix 3 tablespoons of olive oil, 1 teaspoon balsamice vinegar, and Mrs. Dash seasoning to taste
4Pour dressing on veggies and put the lid on the bowl.
5Shake well until coated.
6Pour out onto alluminum foil line cookie sheet
7Roast at 425 - 450 degrees for 10-20 minutes depending on the desired tenderness
