Cut up squash, zucchini, onion, bell peppers (experiment with others - potaotes, egg plant,turnips)

Put in a bowl with a tight fitting lid

Mix 3 tablespoons of olive oil, 1 teaspoon balsamice vinegar, and Mrs. Dash seasoning to taste

Pour dressing on veggies and put the lid on the bowl.

Shake well until coated.

Pour out onto alluminum foil line cookie sheet

Roast at 425 - 450 degrees for 10-20 minutes depending on the desired tenderness
