Baby Bok Choy can be found in any Asian market.
Overall length should be 3'' or less

Rinse well to remove the sandy soil

With use of a cutting board slice off about a 1/4 inch of the bottom

Place in a large container and cover with cold water

Let it sit for at least 30 minutes. It will hydrate and grow larger

Prepare a large skillet or Wok with some olive oil

Add several cloves of fresh garlic, sliced

When garlic just starts to brown, pull double hand full of Baby Bok Choy from the bowl and shake off excess water and drop into the skillet

Salt and immediately stir

Continue to drop in batches of Baby Bok Choy and stir until leaves turn a dark green. This will only take a couple of minutes. If the white turns translucnet it is over cooked.

Pull the pan from the heat and let sit for a couple of minutes and serve warm.
