1Combine boiling water and bulgur in heatproof bowl, stir, cover and set aside for 1 hour.
2Zest lemon into bowl with bulgur, then squeeze in lemon juice.
3Add olive oil, salt and pepper to taste.
4Stir in chopped veggies and feta, and chill for at least 1 hour.
