MELT BUTTER OR MARGARINE PRIOR TO USE IN STEP 4.
CHOP FRESH PARSLEY PRIOR TO USE IN STEP 5; DEHYDRATED PARSLEY MAY BE USED
FOR FRESH PARSLEY, SPRINKLE 2 TBSP OVER POTATOES IN EACH PAN.
1. COVER POTATOES WITH SALTED WATER; BRING TO A BOIL; REDUCE HEAT. COVER;
SIMMER 20 TO 25 MINUTES OR UNTIL TENDER.
2. DRAIN; RESERVE INDICATED AMOUNT OF RESERVED LIQUID FOR USE IN STEP 4.
3. PLACE ABOUT 25 SERVINGS POTATOES, APPROXIMATELY 4.25 QT, IN EACH STEAM
TABLE PAN.
4. COMBINE BUTTER OR MARGARINE AND RESERVED LIQUID; POUR EQUAL AMOUNT OVER
POTATOES IN EACH PAN. APPROXIMATELY 1 CUP PER PAN.
5. SPRINKLE EQUAL AMOUNT OF PARSLEY OVER POTATOES IN EACH PAN. APPROXIMATELY
1/2 CUP PER PAN.
