Poblano pepper, roasted, seeded and chopped

Season and bake chicken, then chop to desired size

Chop onion and celery, saute in 2 tsp oil until tender

Place mixture in a 14 X 9 in dish coated with cooking spray.

Sprinkle the 2% monterey jack

Spray lightly with cooking spray and cook in a 375 degree oven for 15 - 20 minutes or until thoroughly heated and the topping is browned.
