raw sliced mushrooms

white wine

chicken broth or stock

grated parmesan

heavy cream

parsley, minced fresh

Boil pasta as per package (4-5 minutes). Reserve 1/2 cup cooking liquid.

Heat butter and olive oil in large saute pan.

Add celery, shallot (or onion) and cook 3 minutes.

Add fresh mushrooms and cook till lightly browned.

Add turmeric, paprika.

Add wine to deglaze pan. Cook 1-2 minutes.

Add chicken broth and 1/2 cup reserved pasta liquid.

Add cooked chicken or turkey and heat through.

Add cooked noodles.

Stir in heavy cream and grated parmesan ( or asiago)

Garnish with parsley. Add salt and pepper to taste.
