Soak dry beans overnight.
Chop bacon and cook until crisp.
Add onion, carrot, celery and garlic. Just cook until everything starts to give off a good smell...no need to brown, that''s overdone.
Toss everything into a gallon of boiling water. Spice as you like. I like salt, pepper, red pepper, some curry powder, cumin and some sriracha.
Simmer for 2 hours. Ready to eat at that point, but tastes better the next day, so you could chill after cooking and serve the next day after warming up.
