Whisk egg and egg whites til light and frothy

In separate bowl mix all dry ingredients til blended

grease muffin tins or mini muffin loaf with coconut oil

pour batter in evenly to tins or into one mini muffin loaf

bake at 350 degrees for 12-15 minutes for muffins or 18-22 minutes for loaf
checking for done-ness at 12 minutes for muffins and 18 minutes for loaf
