Recipe Description This is a great creamy smooth muffin meal. It's Great for a low carb high protein meal with just the right amount of fat. Can be eaten as a pre workout meal 2 hours before working out, or as a lunch or dinner meal. Not to be eaten directly after a workout due to higher fat content.

Sequence Step
1Whisk egg and egg whites til light and frothy
2add avocado and grated zuchini
3In separate bowl mix all dry ingredients til blended
4mix into wet ingredients until combined
5grease muffin tins or mini muffin loaf with coconut oil
6pour batter in evenly to tins or into one mini muffin loaf
7bake at 350 degrees for 12-15 minutes for muffins or 18-22 minutes for loaf checking for done-ness at 12 minutes for muffins and 18 minutes for loaf tops should brown done when knife stuck into center pu;;s out clean
