prepare all vegetables and measure out reamining ingredients

in a stock pot over medium heat saute the onions, celery and carrot in oil until tender @5 minutes

add remaining ingredients, bring to a boil

cover, reduce heat and simmer 30 minutes or until the lentils are tender, but not mushy
