Recipe Description As a Nutritionist, I believe in simple recipes that are full of flavour and pack a nutritional punch. My inspiration was artichokes because this vegetable is not widely used and is full of fiber, vitamins and minerals.

cupsartichoke quarters, frozen (thawed), diced

cupLeeks, chopped

cupcelery root, diced

tablespoonthyme, fresh or dried

tablespoonrosemary, fresh or dried

tablespooncoconut oil

teaspoonsalt

cups (8 fl oz)water

Sequence Step
1In a large pot over medium heat, add coconut oil, leek, carrot, celery root, garlic, artichokes, thyme, rosemary and season with salt and pepper until all flavours are well blended, about 5-6 minutes.
2Add water and bring to a slow boil, then turn down heat and let simmer for 20 minutes or until vegetables are soft.
3Take half the soup mixture and pureƩ in a blender. Return to pot and blend well. Simple and delicious.
