Preheat oven to 375 degrees

Spray muffin tin with cooking spray

Mix wheat bran with soymilk and let stand for 10 minutes.

Meanwhile, in a large bowl, mix together applesauce, egg beater, brown sugar, and vanilla.

Beat in bran mixture.

Sift together, the two flours, baking soda, baking powder, and salt.

Stir dry ingredients into bran mixture until just blended. Fold in blueberries and chopped apple.

Scoop into muffin cups.

Bake in preheated oven for 15-20 minutes, or until tops spring back when lightly tapped.
