1Coat a non-stick skillet with cooking spray and heat over medium heat. Cook the egg on both sides until desired degree on doneness.
2Lightly toast the english muffin (over toasting will make the muffin hard when you go to microwave it).
3Assemble the sandwich: Spread both sides of english muffin with 1 tsp of purchased mango chutney on each side; add the egg, shredded cheese and prosciutto. Wrap in parchment paper and store in freezer.
4On the morning you want to eat it, just throw it in the microwave for about 1 1/2 minutes on high power. Eat it on the run.
