Steps
Sequence Step
1Combine ginger, oil, vinegar and garlic. Toss the beets in this dressing mixture. Add salt and pepper to taste.
2Mix carrots and scallions.
3Arrange lettuce on a plate. Mound carrots in the center. Spoon the beets around the carrots.
4Serve chilled or at room temperature.
