Heat the oil in a non-stick skillet. Add the onions, thyme and sale and saute on high heat, stirring often, until golden (about 10 minutes).

Lower the heat, cover and cook for about 15 minutes, stirring occasionally, until the onions are very soft and brown.

Stir in the bulghur, cinnamon and boiling water. Cover tightly and simmer gently until all of the liquid is absorbed (about 15 minutes).

Add salt and pepper to taste. Fluff before serving.
