Toss apples with lemon and lime juices, shallots, cilantro, mint, fish sauce (bragg''s), garlic, red pepper flakes and scallions.

Boil shrimp for 30 seconds. Drain and gently mix them into the salad. Cover and chill for at least 30 minutes.

Serve chilled over lettuce.
