| 1 | Defrost and Season tilapia with salt and pepper | 2 | In a bowl mix up corn meal (Ground Fritos or Corn chips works better) cumin and salt and pepper. | 3 | Dip Tilapia Fillets in Lime Juice and roll into crumb or corn meal mixture, place on sprayed sheet pan and bake until done. | 4 | While Tilapia is baking dice all jalapenos, onions, tomatoes, and mix together with a little more lime juice. | 5 | Plate done and crispy Tilapia, and top with Pico de gallo Mixture.
A Little Shredded Cheddar Cheese could be added if wished. |
