Heat, add the onion and seasoning and cook for 5 minutes until softened

Add the ginger, carrots, chciken/veg stock and 1/2 cup water.

Bring to the boil, cover and simmer gently for 20-25 minutes until the vegetables are tender.

Stir the soup until smooth or puree in a blender/food processor.
