Steps
Sequence Step
1Heat, add the onion and seasoning and cook for 5 minutes until softened
2Add the ginger, carrots, chciken/veg stock and 1/2 cup water.
3Bring to the boil, cover and simmer gently for 20-25 minutes until the vegetables are tender.
4Stir the soup until smooth or puree in a blender/food processor.
5Stir in the lemon zest, salt and pepper to taste.
