blockstofu (block 1lb) cut in 1" cubes

Steps
Sequence Step
1Add all ingredients EXCEPT for fresh spinach, tofu, peas and 1/2 teaspoon of salt to slow cooker
2Set to low and cook for 4 1/2 hours
3At about 4 hours, add in fresh spinach and stir
4When fresh spinach is wilted, puree entire mixture with a handheld immersion blender until creamy.
5Next fold tofu cubes, frozen peas and remaining 1/2 teaspoon of salt
6Put lid back on slow sooker and let tofu and peas warm up.
7Serve over brown rice and chopped cilantro. (Don''t add the cilantro until the end)
8Keeps well in the fridge for leftovers and freezes great!
