medium (2-1/4" to 3-1/4" dia.)potatoes cubed

Steps
Sequence Step
1In a medium/large pot, combine water, potatoes, leeks, bouillon cubes and onion. Bring to a boil.
2Lower heat to a soft boil and cook for approx. 20 minutes.
3Remove from heat. With a hand blender, carefully blend until semi-smooth (some potato lumps will be evident).
4Serve in soup bowls with a sprig of parsley garnish. Great with Multigrain or Whole wheat rolls.
