In a medium/large pot, combine water, potatoes, leeks, bouillon cubes and onion. Bring to a boil.

Lower heat to a soft boil and cook for approx. 20 minutes.

Remove from heat. With a hand blender, carefully blend until semi-smooth (some potato lumps will be evident).

Serve in soup bowls with a sprig of parsley garnish. Great with Multigrain or Whole wheat rolls.
