1Sprinkle salmon with pepper and salt on both sides; patt lightly so spices adhere. heat olive oil in a large skillet over high heat; add salmon, skin side up. Cook to sear, about 1 1/2 to 2 minutes. Carefully turn sith spatula. Cook to sear, about 1 1/2 to 2 minutes.
2Reduce heat to low, cover skillet. Cook until salmon is almost cooked through, about 2 to 4 minutes depending on thicknes. Transfer to platter or plates.
3Mix sour cream, horseradish, and dill weed in a bowl while salmon is cooking. Stir in enough milk to make a drizzling consistency. Drizzle over salmon.
