Rinse quinoa thoroughly in a fine strainer.

In a saucepan, cover quinoa with 2 cups water, bring to boil then simmer 20 minutes, covered, on low heat.

Drain any unabsorbed water and cool while preparing rest of vegetables.

Mix diced avocado with lime juice before adding to salad.

Toss all ingredients to mix well. May be served warm or cold.
