large (2-1/4 per lb, approx 3-3/4" long, 3" dia)Peppers, sweet, red, raw, minced

Steps
Sequence Step
1Rinse quinoa thoroughly in a fine strainer.
2In a saucepan, cover quinoa with 2 cups water, bring to boil then simmer 20 minutes, covered, on low heat.
3Drain any unabsorbed water and cool while preparing rest of vegetables.
4Mix diced avocado with lime juice before adding to salad.
5Toss all ingredients to mix well. May be served warm or cold.
