cucumber (8-1/4")Cucumber, peeled and sliced thinly

largeSweet onion, halved and sliced very thinly

cupapple cider vinegar

Steps
Sequence Step
1Slice cucumbers and onion into very thin slices. You may need to cut the onion into quarters or halves. Place in a storage bowl with lid.
2Stir together vinegar, water, sugar and pepper and pour over onion/cucumber mix. Salt may be added but you do not really need it.
3Cover and marinate at least an hour. Turn bowl to redistribute liquid frequently. It is better to let it marinate over night. The longer this sits, the tastier it gets.
4Makes six to eight servings.
