Taken from the "bible" of Greek cooking by Phaidon publishing. This recipe has been altered to reduce sugar calories and increase the whole grain content.
Mix dry ingredients except sugar in a medium sized bowl and set aside. Mix oil, sugar and juice until combined. Stir in carrots and apple and stir in other dry ingredients until well combined. Bake in 9" cake pan for 45 minutes at 350 degrees or until tooth pick in the middle comesout clean.
