cupsKidney beans, canned (red, 2- 15oz cans (drained)

can (28 fl oz)tomatoes canned, diced

smallOnion, chopped

can (15 oz)coconut milk

teaspooncurry powder (add more to taste)

teaspoonolive oil
1
clovegarlic minced, large clove

dashsalt, to taste
Steps

1Cook basmati rice according to package instructions
2In a pot, saute garlic and onions in oil
3Add 2 teaspoons curry powder and stir
4Add tomatoes with juice and simmer for about 10 minutes
5Add the coconut milk and simmer for 10 minutes. Taste the mixture and add another teaspoon of curry powder if you like.
6Add drained beans
7Cover and simmer for 15-20 minutes, adding salt to taste.
8Serve over basmati rice
